Quiche

Een quiche vind ik ideaal om veel groente in stoppen en om klaar te maken voor de volgende dag(en) als lunch. Uit deze quiche haal ik 4 porties en daar lunchen we dan 2 dagen mee. Vaak met een soepje ernaast. Een goed verzadigende lunch met veel groente! Dit is een vegetarische variant.

 

Nadeel van een ´normale´ quiche is dat het bladerdeeg zorgt voor veel koolhydraten en het daardoor snel een calorierijke maaltijd word. Een quiche kan ook heel goed zonder bladerdeeg, zoals deze. 

Quiche en soep
Spinazie-Mozzarella Quiche

zonder bladerdeeg

Tijd: 20 min | 4 porties

Dit heb je nodig

  • 400 gr verse spinazie
  • 4 eieren
  • 1 rode ui 
  • 125 gr mozzarella 
  • 200 gr champignons 
  • 200 ml kookroom light (of crème fraîche)
  • 30 gr pijnboompitten 
  • peterselie, zout en peper naar smaak

Zo maak je het

  1. Verwarm de oven voor op 200 graden.
  2. Snijd de ui in ringen, de champignons in plakken en bak dit voor 3 minuten in een scheutje olie.
  3. Snijd ondertussen de spinazie grof. 
  4. Voeg de spinazie toe aan de champignons en ui en laat het slinken. 
  5. Voeg de peterselie, zout en peper toe. 
  6. Doe het mengsel in een taartvorm en verdeel het over de bodem. 
  7. Kluts in een kom de eieren en de crème fraîche en schenk dit over de spinazie. 
  8. Snijd de mozzarella in plakken en verdeel dit over de quiche.
  9. Bestrooi de quiche met de pijnboompitten.
  10. Bak de quiche voor 30 min in de oven. 

Tip

  • Je kunt de quiche 1 dag in de koelkast bewaren of het per stuk invriezen.
