Verstopte groente in deze cake, i like! De structuur van deze pompoencake is juist zo lekker smeuïg door de pompoen. Het is een licht cakeje en gaat goed samen met een dot (kokos) yoghurt. Lekker voor tussendoor, als zoete snack of als ontbijt.

Dit is een top recept als je een  wat lichter gebakje wil. Laag in  Calorieën maar wel wat lekkers om te snacken!

Tijd: 25 min | 12 stukken

Dit heb je nodig

  • 250 gr fles pompoen
  • 200 gr volkoren speltmeel 
  • 70 gr dadels
  • 30 gr rozijnen
  • 3 eieren 
  • 1 zakje bakpoeder
  • 8 gr/ 1 tl koek en Speculaas kruiden
  • 10 gr/ 1 el honing

Voor de topping

  • Eventueel: kokos yoghurt

Dit heb je ook nodig

  • Brownievorm
  • Bakpapier

Zo maak je het

  • Verwarm de oven voor op 180 graden.
  • Laat de dadels 10 minuten in warm water weken, haal daarna de pit eruit en snij de dadels in kleine stukjes.
  • Schil de pompoen en snijd deze in kleine blokjes.
  • Voeg alle ingrediënten bij elkaar in een kom behalve de bakpoeder en mix dit.
  • Voeg dan de bakpoeder toe en mix dit door het beslag.
  • Bekleed je cakevorm met bakpapier en giet hier het beslag in. Zet de cake voor 35 minuten in de oven.

Tip

  • Doe de pompoen vooraf in zijn geheel in de oven voor ongeveer een kwartier. De pompoen wordt zachter en is zo makkelijker te snijden, schillen en mixen!

  1. Hey Maudy, fantastisch recept maar volgens mij mis ik vocht in je recept. Nadat ik al je ingrediënten had gemixt vond ik het beslag kurkdroog. Ik heb er 1 ei en 100-150ml ongezoete amandelmelk aan toegevoegd. Mist er iets in je recept of heb ik iets gemist?
