Deze eiwitrijke Kokos Kwarktaart doet het heel goed als (verantwoord) dessert, voor tussendoor of als ontbijt! Een frisse kwarktaart met een touch of chocolate. En dat maakt hem wel echt af!

De eiwitrijke  Kokos Kwarktaart  kun je ook invriezen zodat je niet de hele taart in 1 keer hoeft op te eten;)

Kokos Kwarktaart

Tijd: 30 min | 12 stukken

Dit heb je nodig

Voor de bodem

  • 2,5 snee roggebrood 
  • 120 gr dadels 
  • 40 gr havermout 
  • 30 gr cacao poeder 

Voor de kwarklaag

  • 70 gr kokos rasp 
  • 900 gr kokos kwark (Campina magere kokos kwark) 
  • 60 gr eiwitpoeder  (kan ook zonder eiwitpoeder)
  • 8 gelatine blaadjes 

Voor de topping

  • 100 gr pure chocolade (ik gebruikte 72%)

Dit heb je ook nodig

  • Taartvorm/ brownievorm
  • Bakpapier

Zo maak je het

  • Laat de dadels 10 minuten in heet water weken en snijd daarna de pitten eruit.
  • Snijd de dadels in hele kleine stukjes en breek het roggebrood in stukjes.
  • Leg de gelatineblaadjes in koud water.
  • Doe de dadels, het roggebrood, cacao en de havermout in een kom en kneed dit tot een bal.
  • Bekleed de taart/brownie vorm met bakpapier. Leg de bal in het midden en verdeel gelijkmatig over de bodem. Zet hem dan in de koelkast.
  • Meng (of mix) de kokos kwark met de eiwitpoeder en de kokosrasp.
  • Doe 5 eetlepels kwark in een pannetje, maak dit warm, voeg de gelatine hierbij en roer tot het is opgelost. Voeg de kwark met gelatine bij de rest van de kwark en roer door.
  • Verdeel het kwarkmengsel over de bodem. Laat dit minimaal 4 uur opstijven in de koelkast.
  • Smelt dan de chocolade au bain marie en giet de chocola over de taart als je deze uit de koelkast haalt. Besprenkel met wat kokosrasp en laat nog 30 min opstijven.

Tip

  • Om de taart en chocolade laag in mooie stukken te snijden houd je een broodmes even onder de hete kraan. Droog deze af en snijd dan de taart aan. Zaag met het mes door de chocoladelaag heen zodat je deze mooi kunt snijden.
  • Kun je de taart niet in een paar dagen op? Of wil je jezelf beschermen?;) Je kunt de stukjes taart ook invriezen en op een later moment eten!
