Pompoen stamppot

Dit koudere weer vraagt om een stamppot recept. Vroeger was ik hier niet zo gek op, maar nu ik steeds meer varianten ontdek op de originele stamppotten, ben ik toch wel fan geworden van een winters stamppotje!

 

Dus ik heb mijn favo groente van het moment, pompoen, in een stamppot gegoten. De geitenkaas maakt het romig en de walnoten en pompoenpitten geven de stamppot een goede bite. Ik hoop dat jullie hier ook van kunnen genieten!

met geitenkaas & walnoten

Tijd: 30 min | 4 porties

Dit heb je nodig

  • 3/4de bol pompoen (ongeveer 700 gr / ronde oranje pompoen)
  • 500 gr zoete aardappel (geschild)
  • 600 gr verse spinazie
  • 15 zongedroogde tomaten
  • 125 gr geitenkaas
  • 20 walnoten
  • handje pompoenpitten
  • 2 el olijfolie
  • peper & zout

Zo maak je het

  1. Verwarm de oven voor op 180 graden.
  2. Leg de pompoen hier met schil en al in voor ongeveer 15 minuten. De pompoen wordt zo iets zachter en beter te snijden.
  3. Haal de pompoen uit de oven en snijd de pompoen in grove stukken. Je hoeft hem dus niet te schillen. Leg de stukken pompoen op een bakplaat met bakpapier en verdeel hier 2 el olijfolie overheen en wat peper en zout. Bak de pompoen in 25 minuten.
  4. Schil de zoete aardappels, snijd deze in grove stukken en kook voor 8 minuten. Giet de aardappels af en stamp deze grof.
  5. Voeg de pompoen bij de zoete aardappel en stamp deze samen. Voeg dan ¾ de van de geitenkaas toe en stamp dit mee.
  6. Doe de spinazie in een grote kom en giet hier kokend water overheen zodat de spinazie slinkt. Zorg dat alle spinazie is geslonken en giet het dan af. Knijp de spinazie hierna goed uit zodat er zo weinig mogelijk vocht in blijft zitten. Voeg de spinazie dan toe aan de stamppot.
  7. Snijd de zongedroogde tomaten in stukjes, voeg dit toe en stamp dit samen.
  8. Voeg nog wat peper & zout toe naar smaak.
  9. Leg de stamppot op het bord en maak het af met de walnoten, pompoenpitten en de rest van de geitenkaas.

Tip

  • Dit recept is goed te gebruiken als mealprep! Het recept is voor 4 porties. Heb je over? Doe dit dan in een bakje en bewaar het max 3 dagen in de koelkast of vries het direct in en haal het er op een later moment uit.
