Toen ik parelcouscous ontdekte was ik meteen helemaal om! Het zijn een soort kleine pastabolletjes en dat geeft een hele lekkere bite. Je kunt hier veel combi’s mee maken maar deze met feta en sugarsnaps vond ik verrassend lekker!

Je kunt zelf variëren met de hoeveelheid parel couscous die je gebruikt. Iets minder parel couscous zorgt voor minder koolhydraten in  de maaltijd.

Parel Couscous Salade

 

Met feta & sugarsnaps

Tijd: 15 min | 1 portie

Dit heb je nodig

  • 50 gr parelcouscous
  • 50 gr feta 
  • 75 gr sugar snaps 
  • 100 gr snack tomaatjes
  • 40 gr avocado
  • 1/2 ui
  • 1 scheut sojasaus 
  • basilicum, peper en zout naar smaak

Zo maak je het

  • Kook de parelcouscous zoals op de verpakking staat.
  • Snijd ondertussen de feta in stukjes. Snijd de ui en de snack tomaatjes door de helft en de avocado in blokjes.
  • Wok de sugarsnaps in olijfolie en doe er op het einde een scheut sojasaus bij.
  • Doe de couscous in een schaal met alle groenten en feta erboven op en voeg de basilicum, peper en zout naar smaak toe.

Tip

  • Dit recept is goed te gebruiken als mealprep! Maak in een keer meerdere porties klaar en bewaar deze in een bakje in de koelkast. Max 4 dagen in de koelkast te bewaren.
