Deze carrot cake met frosting is top als gezonde(re) variant op de normale carrot cake! Altijd fijn als er groente verstopt zit in je baksel.  Hier zit  natuurlijk wortel in maar verder is deze cake ook gewoon heel lekker zoet. De frosting geeft een frisse romige touch en de walnoten maken het af!

 

Carrot cake met frosting

Tijd: 30 min | 12 stukken

Dit heb je nodig

Voor de cake

  • 230 gr wortel
  • 2 bananen 
  • 150 ml amandelmelk 
  • 3 eieren 
  • 150 gr volkoren meel 
  • 150 gr amandelmeel 
  • 1 zakje/ 15 gr bakpoeder 
  • 5 gr kaneel
  • 5 gr koek en speculaas kruiden 
  • citroensap van 1 schijf citroen
  • 50 gr rozijnen 
  • Optioneel voor een zoetere cake: scheutje zoetstof/ vanille aroma

Voor de frosting

  • 200 gr roomkaas ( ik gebruikte light)
  • 200 gr ricotta 
  • citroensap van een halve citroen
  • kaneel naar smaak
  • 2-4 el ahornsiroop/ honing/ zoetstof

Voor de topping

  • 1 handje walnoten (of pistache noten) 
  • 1 handje wortelrasp

Dit heb je ook nodig

  • 2 cake vormen of 1 taartvorm
  • Bakpapier

Zo maak je het

  • Verwarm de oven voor op 180 graden en bekleed de cakevormen met bakpapier.
  • Rasp de wortelen in een kom .
  • Voeg daarna de rest van de natte ingrediënten (banaan, amandelmelk, eieren, citroensap) hier aan toe en mix tot een samenhangend mengsel. 
  • Meng dan alle droge ingrediënten samen (meel, bakpoeder, kruiden, rozijnen), voeg dit bij de natte en roer goed door.
  • Verdeel het mengsel over de 2 cake vormen en zet deze in de oven.
  • Bak de cake in 40 minuten. De cake is gaar als je een satéprikker erin prikt, en deze er schoon uitkomt. Laat hem vervolgens volledig afkoelen.
  • Voor de cream cheese frosting, meng je alle ingrediënten met elkaar.
  • Smeer de cream cheese frosting op de afgekoelde eerste cake. Plaats de tweede cake hier bovenop en besmeer deze weer met een laag frosting.
  • Top de cake af met gehakte walnoten en wat wortelrasp

Tip

  • Heb je geen 2 cakevormen? Je kunt ook 1 taartvorm gebruiken en deze horizontaal doormidden snijden. Nu heb je alsnog 2 cakes. Smeer op de onderste helft de eerste laag frosting, leg de bovenste helft erop en besmeer ook die met de frosting.
