Bulgur

Een lekkere frisse salade die je goed koud kan eten. Ideaal als mealprep! De granaatappel geeft een lekker frisse bite. Je hebt deze salade echt zo in elkaar gezet en je kunt er eventueel nog een eiwitbron aan toe voegen. Denk aan kipfilet of vegetarische balletjes.


Heb je geen bulgur in huis? Of  wil je wat afwisseling? Dan kun je ook altijd quinoa, couscous of boekweit gebruiken.

Bulgur met Granaatappel en Munt

Tijd: 10 min | 1 portie

Dit heb je nodig

  • 50 gr bulgur
  • 100 gr verse spinazie
  • 100 gr rode kool
  • 1 stengel bosui
  • 1 hand/ 25 gr granaatappelpitjes 
  • 1 handje vers gesneden munt
  • Evt. 1 handje vers gesneden koriander
  • 50 gr feta
    Peper en zout

Zo maak je het

  1. Kook de bulgur volgens de aanwijzingen op het pak.
  2. Snijd de spinazie in stukken.
  3. Snijd de rode kool en bosui in kleine stukjes, pel de granaatappel en snijd de feta.
  4. Mix de bulgur met alle groente, verse kruiden en peper en zout. 
  5. Top je salade af met de granaatappel en de feta.

Tip

  • Dit recept is goed te gebruiken als mealprep! Maak in een keer meerdere porties klaar en bewaar deze in een bakje in de koelkast. Max 4 dagen in de koelkast te bewaren.
