Bulgur met pompoen

Bulgur salade met pompoen, spinazie, halloumi en pompoenpitten. De pompoenpitten zorgen voor de bite en de halloumi geeft een heerlijke smaak. Je kunt het zowel warm als koud goed eten en dat maakt het ook meteen een fijne mealprep!

Ik vind het lekker om de pompoen niet te lang te koken zodat je een bite houd en het niet te zacht wordt. Prik tijdens het koken regelmatig even in de pompoen om te checken of deze al goed is.

Houd je van een dressing erbij? Maak dan eens een kwarksausje van kwark of yoghurt met dille of munt en peper en zout.


Heb je geen bulgur in huis? Of  wil je wat afwisseling? Dan kun je ook altijd quinoa, couscous of boekweit gebruiken.

Tijd: 10 min | 1 portie

Dit heb je nodig

  • 50 gr bulgur
  • 100 gr verse spinazie
  • 200 gr pompoen (ik gebruik flespompoen met schil)
  • 60 gr halloumi
  • 10 gr pompoenpitten
  • Peper en zout

Zo maak je het

  1. Kook de bulgur volgens de aanwijzingen op het pak.
    Was en snijd de pompoen in stukken. Kook de pompoenblokjes gaar.
  2. Snijd de spinazie in stukken.
  3. Bak de halloumi (zonder olie)  in een paar minuten goudbruin en draai deze 1 keer om.
  4. Leg de bulgur op een bord met daarop de spinazie, pompoen, halloumi en top het af met de pompoenpitten, peper en zout.

Tip

  • Dit recept is goed te gebruiken als mealprep! Maak in een keer meerdere porties klaar en bewaar deze in een bakje in de koelkast. Max 4 dagen in de koelkast te bewaren.
